Centennial sweet potatoes have an orange exterior and orange flesh. They are known for producing elongated sweet potatoes as opposed to the round sweet potatoes you'll get from traditional varieties. These longer sweet potatoes have a drier, more stringy texture than comparable orange sweet potato varieties. The longer shape makes Centennial a perfect variety for cutting into "chips" and frying.

Centennial is an older sweet potato variety that was developed by Louisiana State University in the 1960s. It has a 100 day maturity date but can stay in the ground longer if your weather conditions aren't ideal for harvesting.

The sweet potatoes can also be mixed in a breakfast hash, diced and served with pasta, sliced into curries, tossed into salads, fried for tempura, or incorporated into soups and stews. Japanese sweet potatoes pair well with meats such as pork chops, poultry, and steak, poached eggs, prunes, rice, sesame seeds, shiitake mushrooms, spinach, broccoli, scallions, onions, garlic, rosemary, thyme, miso, mirin, and wasabi. The roots will keep up to a week when stored in a cool, dry, and dark place with good air circulation.
