Epazote is common to Mexican cooking. Epazote is most commonly found in bean dishes. It is also used in soups and moles. Epazote has a slightly tangy flavor, reminiscent of oregano. It is used both for flavor and for its ability to reduce the flatulence associated with bean dishes.
